I Find This Lack of Baking..Disturbing

Vigor, strength, vitality are all adjectives not used to describe me these past few months. Instead, lethargic, weak, and bruised seem to be more common. My body has been preparing for a quickly approaching birthday milestone (40) by falling completely apart.  Not the usual growing pains that come with age, but the kind that require multiple doctors and medications. Luckily, a prescription change has proven to give a much needed respite from a  bad reaction that had been making matters worse.

I have finally regained a bit of  pep back into my step!  I decided to celebrate by going on a baking binge a couple of Saturdays ago.

A recipe for Reese’s Stuffed Peanut Butter Cookies popped up on my Facebook feed. They had my peanut-butter enthusiast hubby’s name all over them.  It felt nice to be doing something for him, for a change.  Plus it would be the perfect opportunity for me to finally christen my Kitchen Aid stand mixer!

While I was out procuring ingredients for my cookies, I decided to grab a cake mix and s frosting.  The hubby and I were planning on taking his mom out to dinner for her birthday that night.  I thought it would be cute to throw together a quick Darth Vader cake for dessert.

So to recap:

  1. It’s the first day in months I felt anywhere close to not dying.
  2. I was going to scratch bake cookies
  3. I was going to bake and decorate a cake

I smell a baking fail on the horizon.

To avoid disaster I made a plan.  I would:

  1. Start the cookie dough first.
  2. While the dough chilled, I would bake the cake.
  3. While the cake cooled, I would bake the cookies.
  4. While the cookies cooled I would frost and decorate the cake.

My plan mostly worked.  Things fell apart in between steps 3 & 4. It was here where my favorite owl mitts decided to give way while holding the piping hot cookie sheet.  It’s kind of hard to ice and decorate a cake with one hand on ice.    It’s certainly not the first time I had a FUBAR cake, lol, won’t be the last.
